Nicolas Roulier is the restaurant manager of the Bybrook Restaurant at the Manor House at Castle Combe. Here are his recommendations for choosing champagne.

Which champagne would you recommend for a wedding this autumn/winter?

This year we are recommending Henry Giruad Code Noir Rose, it is a wonderful pinot noir with a tone of cherries and raspberries against an aromatic explosion of pepper and cloves.

What makes your chosen champagne so special?

The combination of an assured
character, this magnicificent cuvee has a proud white foam, with the elegancy of a Rose whose coppery highlights demonstrate a deep and delicious taste.

Do you have any advice on how people should select champagne for special occasions?

I think first and foremost it is really important to choose something you like and going on recommendation is often a good starting point, I am always asking my colleagues and friends what their current favourites are. As a check list I would follow a format of Marque, Dryness, Vintage and Size of Bottle. There are many great Marques (brands) and you should be able to determine your shortlist from the recommendations above.

What, in your view, is the best way to serve champagne?

With great company. I am a purist so I like to enjoy my Champagne with nothing else to distract the palate – after all Champagne is a delightfully complex and sophisticated drink.
